How it gets described on the phone
- One burner lights from a match but will not light from its own spark
- Clicking that carries on across the whole cooktop long after a burner has caught

- Every burner lit in turn and watched at full and at simmer, not just switched on
- Spark checked at each electrode, and the module watched for sparking that will not stop
- Cavity logged at the middle shelf across a full cycle against the setpoint
- Griddle or simmer plate surface read across its width, edge to edge
- Gas pressure at the manifold, and every joint opened leak-tested before we close up
A professional range is two appliances sharing a gas supply, a chassis and one control circuit, and the interesting faults live where they meet. An oven that will not hold heat while the burners are perfect is an oven fault. An oven that struggles only when three burners are running is a supply or a regulator question, and no amount of work on the thermostat will touch it. Taking the range as one appliance is what stops the second answer being missed.
